This has often bothered me too. I think the whole "write like Hemmingway" thing is general advice for general writing. There is value in writing in a spare, simple style for stuff like websites, blogs, and corporate copy. In those instances, people don't want to feel like they're reading.
The opposite, I believe, is true for literary writing. For goodness' sakes, write with your own voice :)
