This was so very poetic and beautiful! When I visited Vietnam, pho was EVERYWHERE. I knew it was a quintessential Vietnamese dish, but I didn’t know just how pervasive it was. And in my home city of Vancouver, pho is also very much everywhere. People from all sorts of cultures really love this dish. It soothes us during those long rainy Vancouver winters, is affordable and a favourite among students, and is quite healthy compared to other affordable food. I love it, and I honestly want to thank the Vietnamese people for bringing such an amazing dish to humanity ❤
